The fruit bread is easy to make and usually works even without prior experience, but it does require a long resting time. A big advantage: thanks to the simple recipe, the fruit bread can also be adapted for various food intolerances with just a few adjustments!

 

You will need the following ingredients:

  • 1 cube of yeast

  • 50 g sugar

  • 1 tbsp rum or rum flavoring

  • 2 tsp cinnamon

  • 1 tsp anise seeds

  • 1 pinch ground cloves

  • 1 pinch ground allspice

You can choose freely here, as almost all dried fruits and nuts are suitable for fruit bread. We have chosen a classic version and use:

  • 150 g dates, pitted and dried

  • 150 g dried figs

  • 150 g raisins

  • 150 g mixed candied orange and lemon peel, chopped

  • 50 g hazelnuts, roughly chopped

  • 50 g walnuts, roughly chopped

  • 50 g almonds, roughly chopped



How to prepare the fruit bread:

 

  1. The evening before, soak the dried fruits in 1 liter of water and a splash of rum or rum flavoring and leave overnight. The next day, drain the fruits in a sieve and save the soaking liquid.

 

  1. Put the flour in a bowl and make a well in the center. Crumble the yeast into it, sprinkle 1 tsp of sugar on top, and add 6 tsp of the fruit soaking liquid. Mix with a little flour from the edges of the well, then cover and let rest for 15 minutes.

 

  1. Now knead in 7 tbsp of fruit liquid, nuts, dried fruits, sugar, and spices. Form the dough into a ball, cover it, and let it rest overnight at room temperature.

 

  1. The next day, preheat the oven to 180°C (fan). Meanwhile, knead the dough again and shape it into 4 loaves. Place them on two baking trays lined with parchment paper and decorate with almonds if desired. Bake for 30 minutes on the middle rack. For extra shine, you can brush the hot loaves with a little fruit soaking liquid after baking!

  1. To allow it to develop its full aroma, let the fruit bread cool completely, wrap it in aluminum foil, and let it rest for 2 to 3 days!
