Among all the Lebkuchen varieties out there, Elisen-Lebkuchen holds a special place. Anyone who tries it for the first time picks up on the difference right away: instead of a flour-heavy dough, what you taste is nuts, carefully balanced spices, and the natural sweetness of honey. A genuine Elisenlebkuchen is moist, intensely flavored, and gets by with surprisingly little flour – in our finest varieties, with no flour at all.
For a Lebkuchen to even be allowed to call itself an “Elisen-Lebkuchen,” it has to meet strict criteria. These are spelled out in the German Guidelines for Fine Baked Goods and apply across the board to all producers in Germany.

It's a question customers keep asking us: do flour-free Elisen really taste different? The honest answer: yes. Without flour, the Lebkuchen turns out even denser, the nut flavor even more intense, and the texture creamier. That doesn't mean Elisen with flour is somehow lesser – it has its own character and feels a touch lighter on the palate.
If you'd like to try both, a mixed assortment is the way to go. Our Elisen Pieces are also a great way to sample different varieties at a friendlier price point.
Thanks to their high sugar and nut content, Elisen-Lebkuchen is naturally long-lasting – well sealed, they'll keep for several months without any trouble. To keep that moist texture, store them somewhere cool and dry in a metal tin. If they do firm up over time, a slice of apple or a piece of bread crust in the tin will do the trick – the moisture released will soften the Lebkuchen back up.
