Dresdner Christmas stollen recipe

You will need the following ingredients:

  • 1000 g flour
  • 500 g soft butter
  • 600 g raisins
  • 200 g currants
  • 250 ml warm milk
  • 150 g sugar
  • 150 g ground almonds
  • 200 g mixed candied orange and lemon peel
  • 2 organic lemons
  • 2 cubes of yeast
  • 4 cl rum
  • 1 tsp salt
  • 1 tsp cardamom

Preparing Christstollen is not difficult, but it does take some time because the dough needs to rest several times. How to prepare the Stollen:

  1. The day before, wash the raisins and currants, soak them in rum, and let them sit overnight. If you prefer an alcohol-free version, you can use apple juice instead.
  2. The next day, crumble the yeast, mix it with 1 tbsp sugar and 3 tbsp warm milk, and let it rise in a warm place for 15 minutes.
  3. Meanwhile, wash the lemons thoroughly, finely grate the zest, and melt the butter.
  4. Then place two-thirds of the flour in a bowl and make a well in the center.
  5. Pour the yeast mixture into the well and mix with the spices, remaining sugar, lemon zest, butter, warm milk, and flour to form a soft batter until it starts to bubble.
  6. Finally, knead in the remaining third of the flour and add raisins, currants, almonds, and candied orange and lemon peel.
  7. Let the dough rise, covered, in a warm place for at least one hour.
  8. Then shape two loaves, place them on a greased baking tray, and let them rest again briefly.
  9. Bake in a preheated oven (fan 160°C) on the middle rack for 50–60 minutes.
  10. Brush the cooled Stollen with melted butter and sprinkle with powdered sugar.
