How to prepare the Stollen:
- The day before, wash the raisins and currants, soak them in rum, and let them sit overnight. If you prefer an alcohol-free version, you can use apple juice instead.
- The next day, crumble the yeast, mix it with 1 tbsp sugar and 3 tbsp warm milk, and let it rise in a warm place for 15 minutes.
- Meanwhile, wash the lemons thoroughly, finely grate the zest, and melt the butter.
- Then place two-thirds of the flour in a bowl and make a well in the center.
- Pour the yeast mixture into the well and mix with the spices, remaining sugar, lemon zest, butter, warm milk, and flour to form a soft batter until it starts to bubble.
- Finally, knead in the remaining third of the flour and add raisins, currants, almonds, and candied orange and lemon peel.
- Let the dough rise, covered, in a warm place for at least one hour.
- Then shape two loaves, place them on a greased baking tray, and let them rest again briefly.
- Bake in a preheated oven (fan 160°C) on the middle rack for 50–60 minutes.
- Brush the cooled Stollen with melted butter and sprinkle with powdered sugar.
We wish you lots of fun baking and enjoy your meal!
