It may contain a maximum of 10% flour and must consist of at least 25% nuts. However, these cannot be just any nuts—they must be almonds, hazelnuts, or walnuts! The Elisen Lebkuchen is therefore a particularly fine delicacy! What exactly defines Elisen Lebkuchen?

The high-quality recipe of Elisen Lebkuchen can be clearly identified by its premium ingredients. Nuts contain a relatively high proportion of saturated fatty acids, which are well known as excellent flavor carriers. The crunchy texture of the nuts also gives Elisen Lebkuchen a richer bite and fuller taste. Thanks to the combination of high-quality nuts, valuable honey, and fine spices, Elisen Lebkuchen was even believed in the Middle Ages to have healing properties. This delicacy therefore rightly carries the title “Empress of Gingerbread,” as no other gingerbread matches its unique taste and qualities.

Not only are the premium ingredients strictly regulated, but also the glaze according to the German Food Code: it states that no coatings that could be confused with chocolate may be used. This specifically prohibits cheaper cocoa-based fat glazes and only allows real chocolate or sugar icing. In stores, this festive treat is often available in a filled Lebkuchen tin or Lebkuchen chest.



Why is it called “Elisen” Lebkuchen?

The exceptional quality is also reflected in its name, although the origin is not clearly established. One theory suggests it was named after Elisabeth, the patron saint of bakers. Another suggests it was named after the beautiful daughter Elisabeth of a Nuremberg gingerbread baker.

The legend says the young girl was terminally ill with no hope of recovery. Her desperate father had already lost his wife to the illness, making his daughter his everything. To prevent her death at all costs, the baker came up with an unusual idea: he knew about the healing properties of the spices used in gingerbread. To enhance the effect, he completely left out the flour and served her a unique gingerbread. His courage paid off, as Elisabeth slowly recovered. To celebrate her healing, the Elisen Lebkuchen was named after her.

 

Recipe for homemade Elisen Lebkuchen

 

You will need the following ingredients:

  • 50g candied orange peel
  • 50g candied lemon peel
  • 100g ground hazelnuts
  • 200g ground almonds
  • 150g sugar
  • 1 pinch of salt
  • 3 tsp gingerbread spice mix
  • 1 tsp baking powder
  • 20 baking wafers (70 mm)
  • 2 eggs
  • 150g chocolate coating

Preparation is very simple:

  1. Finely chop the candied orange and lemon peel and mix with hazelnuts, almonds, gingerbread spice, and baking powder.
  2. Beat eggs, sugar, and salt until fluffy, then gently fold in the nut mixture.
  3. Line two baking trays with parchment paper and place wafers on them. Spoon the dough onto the wafers and flatten (about 1.5 cm thick).
  4. Preheat the oven to 150°C (fan) and bake in the middle rack for 15–20 minutes until lightly browned.
  5. After cooling, the Lebkuchen can be glazed as desired.
